As the season starts to change, it reminds me that one of my favorite Fall/Winter foods is a pot of beans. I came across this great how-to recipe on making beans at Heritage & Trail Cooking...an awesome site. Explore the interesting info re recipes and cooking in general.

Looks a little bit like ‘Fasolada’ (bean soup with celery, carrots etc…), which is considered the national food of Greeks! 🙂 As you said, bean soup is a really nice winter food.

ps. Don’t forget to place the beans in the water overnight. Also in my opinion I would add some parsley, I would drop the red hot chilli pepper (as the authentic recipe doesn’t include it) and would add at least 2 more carrots (making it total 4-5).

Indeed ! Oh, btw… Fasolada goes well with Feta Cheese and Kalamata Olives (or whatever Olives if you can’t find Kalamata ones…).
